The Canal Fulton Cheese Factory was opened at 555 Market St W in 1912 by Fred Dahler and Jacob Berger. At the time Berger owned the Berger Cheese Factory in New Berlin (now known as North Canton) and Dahler was a manager at the factory. Like its counterpart in New Berlin, the Canal Fulton Cheese factory specialized in Brick Cheese.

The business operated out of the former building of St. John's Lutheran Church at 555 Market St W after the church relocated to its current location at 336 Market St W. When the property was converted into a cheese factory, Milk Storage was in the still-existing former church while a separate no-longer-existing building was erected in which the cheese was produced. It is unclear how long the cheese factory operated, but the building was for some time a duplex and is now a single-family home.

The Building
The building was originally built by the congregation of St. John's Lutheran Church in 1854, who had outgrown their log cabin and frame churches they had occupied previously. The original structure was approximately 36 by 26 feet, with a belfry containing a bell donated by Mrs. Anna Long Simmons. What is now a front porch was once part of the inside of the one-room church. Remnants show that there were once three large arched windows and/or doors on the side facing Market St.

At some point, most likely in the late 19th century, the building was expanded to almost
double the size via an expansion to the South side. When the congregation moved in 1912 the bell was removed from the belfry and installed at the current church, where it continues to be to this day.

A tin ceiling was installed throughout the one-room structure as part of its conversion into a cheese factory. Since then the building was partitioned to convert it into two stories with rooms you would see in a conventional home.

Work done on the building in the 2020's show that the framing used when installing the ceiling was sourced from Finefrock Furniture Store's lumber company.

Fred Dahler
Fred Dahler immigrated from Seftigen, Switzerland in 1905 to work at Jacob Berger's cheese factory in North Canton. At some point between 1913 and 1924 he bought out the North Canton factory while continuing to run the factory in Canal Fulton. In 1924 Fred traveled home to Switzerland to visit his father and conduct some business.
The village of Fulton was platted on May 16th, 1826 by James W. Lathrop and William Christmas on the East side of the Tuscarawas River. Soon after its founding along the canal, the village of Fulton prefixed its name with "Canal", becoming the Canal Fulton that still exists to this day. The village enjoyed the economic boom that the Ohio and Erie Canal provided and because of that it quickly outgrew its neighbor, Milan, on the West side of the Tuscarawas River.

History of Fulton
The first 11 settlements in Stark County were all recorded between the years of 1805 and 1816, and no other settlements were recorded until 1826, when the canal was established through Ohio.

Not enough can be said or researched about the canal and its impact on Ohio, it changed the face of the state and still impacts the state to this day. For now, however, it is suffice to say the town of Fulton was established directly because of the canal.
The first canal town in Stark County was technically Clinton laid out and recorded February 24, 1826, but Stark lost claim to Clinton when Summit County was carved out of Medina, Portage, and the Northwest corner of Stark in 1840. Therefore, Fulton can lay claim to being the oldest canal town in Stark County.

An important Canton attorney, James W. Lathrop, acting as attorney for John H. Brinton of Philadelphia laid out and recorded the plat of Fulton May 16, 1826. The Philadelphia firm of Brinton and Condy after establishing the town of Bethlehem west of the Tuscarawas near Navarre had speculated on the possibilities of a canal and purchased land on the site of Fulton as early as 1805. (George Washington was one of the first to propose a canal through Ohio, and speculators purchased land between the Tusc and the Cuyahoga in anticipation of the canal being laid in the eastern part of the state).

The plat of Fulton contained 87 lots compared with Milan’s 79. Canal Street remains Canal street, but the other street names Main and North have been changed. Fulton was on the canal side of the river, and connected over the canal and the river with Milan by two bridges.
When the canal opened from Cleveland in 1828, a post office was opened in Fulton. This first one lasted only until 1830, when a second office was established with the word “Canal” pre-fixing the Fulton.

The new post-master, John Robinson became a leading grain merchant in Canal Fulton by 1836. Five warehouses were built on the Fulton side for grain storage. Canal Fulton quickly outgrew Milan. Fulton was incorporated in 1838, and by 1853, Canal Fulton and Milan were merged into the one community of Canal Fulton.

The major roads that diverge from Canal Fulton today reveal wagon-drawn traffic from the hinterlands converging to sell their wares at this busy port on the canal. Major roads head west to Wooster, Mansfield, and Ashland; east to Canton and Alliance and even further.

The busy streets of Canal Fulton were defined by their upper and lower sections. “Along Canal Street were two intersections for the upper and lower canal bridges that crossed over to Milan. The upper intersection, with no places where liquor was sold openly, was respectable, and known as Public Square. The lower intersection, where modern routes 93 and 21 cross, at one time had liquor place on all four corners, and was known as Brimstone Corners.” The “old American House” also known as the “Smith House” still stands at Brimstone Corners awaiting the crowds that once jostled and drank.
Many hotels went up in the heyday of the canal, some making use of converted warehouses, however none exist today. The city reached its peak in 1850, just before the railroad reached Canton and Massilon.

Canal Fulton went through the typical periods of growth and decline, but thanks in part to a foresighted heritage society, much of the charm of downtown Canal Fulton escaped massive changes and urban development. This conscientious treatment of the town’s history and preservation set the precedent that carries to this day.

<strong>About the Canal Fulton Public Library:</strong>
<p>
The Canal Fulton Public Library has a rich historic past. The beginnings of the library can be traced to the efforts of former School District superintendents and the school’s Board of Trustees in 1937. The library began to take shape in a room of a Canal Fulton School while efforts to find a permanent location were periodically renewed. Finally in 1948, Canal Fulton residents Mr. and Mrs. George Muhlhauser financed the purchase and remodeling of a residence. Their initial contribution of $8,500 for the purchase of the home was followed by many contributions throughout the years, eventually totaling more than $45,000. The library began with a collection of 5,000 volumes at the 1949 dedication. With steady growth it was soon in need of an addition, which was constructed in 1958. The new addition, while allowing more room for books, also included a lower level social hall, which would eventually become the children’s department. The library continued growing and again was in need of expansion, which was undertaken in 1992 and again in 2003. The farmhouse, first built in 1879, received a complete renovation and an addition that doubled the library’s floor space.
</p>
<b>
Our Mission: to serve educational, cultural & social needs of our communities by providing access to materials, information technology and services.
</b>
<br>
<p>
Throughout the years the library received national attention for its diverse services and cutting edge collection that features items not usually found in other libraries. The library was an early adopter of both computer and video services years before they became mainstream in public libraries. Continuing that leading edge collection and service philosophy, the library has recently added e-readers, tablets, an automotive diagnostics device and an air quality tester. The library continues to have strong community support and strong leadership that have allowed it to grow and become an integral part of the community.
</p>
<p>
The vision of the Canal Fulton Public Library is rooted in our unique past, while being focused on the ever changing needs of the communities we serve.

The Treaty of Fort McIntosh in 1785 had imposed upon the natives (Wyandots, Shawnee, Chippewa, Delaware, ...) the taking of land west of the Ohio to the Tuscarawas, while the Land Ordinance of 1785 set the precedent for the division and distribution of these lands. With the Treaty of Ft. Industry in July 4, 1805, property west of the Tuscarawas became open to white settlers. With the Treaty of Maumee Rapids and the Treaty of St. Mary’s in 1817, all lands in Ohio were accounted for.

In the County of Stark just outside the Connecticut Western Reserve, on lands known as the Congressional Lands, frontier life was dangerous and difficult. Stories abound of Native attacks, confrontations with wild beasts, and difficulty in transportation. Settlers arrived on canoe or foot from Cleveland by way of the Cuyahoga to the Portage to the Tuscarawas or by ox-drawn cart following the state road from Pennsylvania to Canton then cutting wider Indian trails to their destination.

Foresighted surveyors while platting Stark County had included “Fractions” of land west of the Tuscarawas. The surveying went according to the laws of the Land Ordinance of 1785, which provided for six-mile square townships to be created in the newly acquired land, the township would then be divided into one-square mile sections, with each section encompassing 640 acres. Each section received its own number. Section sixteen was set aside for a public school. The federal government reserved sections eight, eleven, twenty-six, and twenty-nine to provide veterans of the American Revolution with land bounties for their service during the war. The government would sell the remaining sections at public auction. The minimum bid was 640 dollars per section or one dollar for very acre of land in each section.

The fraction in the northwest part of Stark County was settled before the land on the east bank of the Tuscarawas. The west side of the river was chosen because of the roads that already existed (old Cleveland-Massillon Road also known as the “army road” or “territorial road” because it was cut during the War of 1812, when the Government needed access to Fort Meigs). Also, it was believed the west side had better quality soil. However, the primary reason the west side of river was chosen was because east of the Tusc, the surveys were in two-section areas (with additional surveying the responsibility of the settler) and west of the River the surveys were done on a one-section basis. Most settlers only wanted to farm (and purchase) a one-section area.

Matthew Rowland purchased one of these fractions of land and recorded the proprietorship at Canton March 23, 1814. Rowland platted the town and offered the 79 lots for sale at a public auction in Canton.

The town was named—Milan, after the Lombardian city of Milan in Italy. It was fashionable at the time to name frontier towns after European cities (witness Paris, Ohio founded in Stark two months before Milan) perhaps it gave settlers a sense of culture and place in the wilds of these lands unexplored by European descendants.

Rowland’s son-in-law built the first structure in Milan (a log cabin), and Rowland soon added a gristmill and a sawmill. Neither was very successful.

The Township that Milan would become a part of was laid off in December of 1815. Lawrence Township was named after Captain James Lawrence famous for his last words during the War of 1812 battle between the American Chesapeake, and the British frigate the Shannon, “Don’t Give up the Ship”. These words are now the township’s motto.

Milan was the only village in the township until the building of the canal between 1826 and 1828, which brought about the town of Fulton on the other side of the river. Milan boasted churches, cemeteries, and a grocery built to service the hundreds of canal workers. Fulton surpassed Milan though and the prefix Canal was added.

For a brief time with the coming of the B & O railroad, Milan once again eclipsed the Port of Canal Fulton. American transportation such as it is, even this balance was tipped again because all the main highways favored the Fulton side of the river. Today Milan no longer exists as it incorporated into Canal Fulton in 1853. It is, however, a quiet residential area, and most in Canal Fulton are aware of the little village’s beginnings.
